Fresh blueberry compote

Blueberry compote is perfect with pancakes or waffles! Fortunately for us, it's also super simple to make, here is my recipe with some added flavour. 🍋

You can use frozen blueberries or fresh blueberries. I personally use fresh ones because I find them just a little bit tastier and sweeter.

Ingredients

150 gram blueberries
20 ml water
1 tablespoon sugar
1 tablespoon powdered sugar
1  half lemon

Preparation

1. Bring the water to a boil in a saucepan, then add the blueberries. Let boil on medium heat for a while.
2. Then add the juice from half a lemon and some of the lemon zest.
3. After this add the powdered sugar and white sugar, let it cook for a few more minutes on medium heat.
4. After about 5 minutes you can turn the heat down low and let it simmer for about 10 more minutes, until it becomes a somewhat thicker mass. Still not thick enough? Add more powdered sugar.
